- 2021 (Sophomore). Played in 11 games (four starts) and had 13 receptions for 183 yards (14.1 ypr) and one touchdown. Also had one rushing attempt for 15 yards.

- 2018 (Freshman). Played in 13 games (two starts) and totaled 19 receptions for 235 yards and a touchdown.
High School. Holker prepped at Lehi High School (Lehi, Utah), where he had 202 receptions for 3061 yards and 33 touchdowns in two seasons. He also had one six yard rush, one 44-yard pass for a touchdown, 27 tackles (16 solo), with two tackles for loss, one sack, one forced fumble, and one interception (MaxPreps).
Recruitment. Holker was rated 3-stars by 247Sports (0.8527), who rated him the no. 14 overall prospect from Utah in the Class of 2018. They also rated him the no. 46 tight end prospect nationally. Holker held scholarship offers from BYU, Colorado State, Hawaii, Oregon State, Southern Utah, and Utah State. Holker committed to BYU on March 20, 2017, signed on February 7, 2018, and enrolled August 7, 2018.
Personal. Holker married Taye Raymond (a BYU track and field sprinter) in 2022.
